Grilled Veggie & Halloumi Cheese Wraps

Take your grilled veggies to the next level with halloumi cheese, a delicious, firm cheese that grills beautifully without melting!

Ingredients:

  • 1 block halloumi cheese, sliced into 1/2-inch pieces
  • 1 zucchini, sliced into thin rounds
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Whole wheat or spinach wraps
  • 1/4 cup hummus (for spread)
  • Handful of arugula or baby spinach

Instructions:

  1. Marinate the Veggies: In a bowl, toss zucchini, bell pepper, and onion with olive oil, balsamic vinegar, oregano, salt, and pepper.
  2. Grill Over Charcoal: Place veggies and halloumi cheese on the grill and cook for 2-3 minutes per side until lightly charred.
  3. Assemble the Wraps: Spread hummus onto each wrap, add grilled veggies and halloumi, and top with fresh arugula.
  4. Wrap & Serve: Roll up the wraps and slice in half for a fresh, flavorful meal.
