
Grilled Veggie & Halloumi Cheese Wraps
Take your grilled veggies to the next level with halloumi cheese, a delicious, firm cheese that grills beautifully without melting!
Ingredients:
- 1 block halloumi cheese, sliced into 1/2-inch pieces
- 1 zucchini, sliced into thin rounds
- 1 red bell pepper, sliced
- 1/2 red onion, sliced
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Whole wheat or spinach wraps
- 1/4 cup hummus (for spread)
- Handful of arugula or baby spinach
Instructions:
- Marinate the Veggies: In a bowl, toss zucchini, bell pepper, and onion with olive oil, balsamic vinegar, oregano, salt, and pepper.
- Grill Over Charcoal: Place veggies and halloumi cheese on the grill and cook for 2-3 minutes per side until lightly charred.
- Assemble the Wraps: Spread hummus onto each wrap, add grilled veggies and halloumi, and top with fresh arugula.
- Wrap & Serve: Roll up the wraps and slice in half for a fresh, flavorful meal.
