Grilled Shrimp & Avocado Tostadas

Light, fresh, and full of flavor, these grilled shrimp tostadas are perfect for summer nights.

Ingredients:

  • 1 lb shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 4 small corn tortillas
  • 1 avocado, mashed
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • Juice of 1 lime
  • 1 tbsp chopped cilantro

Instructions:

  1. Season the Shrimp: Toss shrimp with olive oil, cumin, smoked paprika, garlic powder, and salt.
  2. Grill the Shrimp: Cook over medium-high heat for 2-3 minutes per side.
  3. Crisp the Tortillas: Lightly grill tortillas until crisp.
  4. Assemble & Serve: Spread mashed avocado on each tortilla, top with grilled shrimp, tomatoes, red onion, lime juice, and cilantro.
