Grilled Lemon Herb Chicken Skewers

These zesty and flavorful chicken skewers are packed with fresh herbs and bright citrus, making them the perfect light and healthy meal for your Rustic Metals Portable Collapsible Steel Grill.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional)
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, pepper, smoked paprika, and red pepper flakes.
  2. Marinate the Chicken: Add the chicken pieces to the bowl and toss to coat. Cover and let marinate for at least 30 minutes, preferably 2-4 hours for deeper flavor.
  3. Skewer the Chicken: Thread marinated chicken onto soaked wooden skewers.
  4. Grill Over Hot Charcoal: Place skewers directly over the hot coals on your grill top panel and grill for 3-4 minutes per side, turning until fully cooked and slightly charred.
