Grilled Elote (Mexican Street Corn) Recipe

Grilled Elote, also known as Mexican street corn, is the perfect side dish to bring bold flavor to your cookout. This delicious grilled corn is smothered in a creamy, tangy, and cheesy topping with just the right amount of spice.

Ingredients:

  • 4 ears of corn, husked
  • 2 tbsp olive oil or melted butter
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 cup cotija cheese, crumbled (or feta cheese as a substitute)
  • Juice of 1 lime
  • 2 tbsp chopped cilantro
  • Salt & pepper to taste

Instructions:

  1. Preheat the Grill: Heat your grill to medium-high heat.
  2. Prepare the Corn: Brush the corn with olive oil or melted butter and season lightly with salt.
  3. Grill the Corn: Place directly on the grill grates, turning every 2-3 minutes until charred in spots and tender (about 10 minutes total).
  4. Mix the Sauce: In a bowl, combine mayonnaise, sour cream, garlic powder, chili powder, smoked paprika, and lime juice.
  5. Coat the Corn: Once grilled, brush or spread the sauce mixture over each ear of corn.
  6. Add Toppings: Sprinkle with crumbled cotija cheese and chopped cilantro.
  7. Serve & Enjoy: Serve hot with extra lime wedges on the side for squeezing.
